Whether you’re visiting for a special occasion or simply seeking something extraordinary, our collection of signature offerings promises moments to savour.

Welcome to an unparalleled journey through the finest culinary and drink experiences at Cashel Palace Hotel. Here, every meal is a celebration of exquisite taste and sophistication. Our Culinary Director, Stephen Hayes, in collaboration with Chefs Darren Mulvihill, Stefan McEnteer, Scott Armstrong, James Rigby and Martin Lovell, crafts bespoke menus for every occasion, ensuring sensational dining experiences across our range of dining establishments.

Chef's Table & Private Dining

A bespoke, behind-the-scenes experience. The chef personally presents each course of the tasting menu, describing ingredient provenance and culinary intent. Sommelier Farrah Scanlan offers matching wines in tandem, and the service culminates with petit fours served by the kitchen team.

Ideal for refined gatherings, the entire room may be booked for up to 12 guests. Custom menus, wine selections, and styling elevate everything from corporate dinners to milestone celebrations.

Equine & Culinary Experiences

Across Cashel Palace’s dining outlets, guests can enjoy exclusive equine and culinary tour packages in partnership with the Fethard Horse Country Experience and Coolmore Stud. These experiences offer a seamless blend of Ireland’s rich Thoroughbred heritage and seasonal cuisine, celebrating the connection between land, legacy, and flavour. Whether enjoyed as part of a curated group day out or an individual cultural journey, each offering reflects the spirit of Tipperary through food and story.

Private Whiskey Tastings

Step into the world of whiskey with a private tasting experience at Cashel Palace, an immersive encounter with Ireland’s most celebrated spirit. Guests are guided through a curated selection of premium whiskeys, from smooth, triple-distilled Irish expressions to rare single malts and distinguished international labels.

Each tasting explores the depth, aroma, and character of this storied spirit, with insights into distillation techniques, regional styles, and the subtle art of cask ageing. Whether you're a connoisseur or simply curious, the experience is tailored to your palate and paced to savour.

Wine Pairings & Tasting Experiences

Wine is an essential thread in the dining tapestry of The Bishop’s Buttery, each bottle selected to echo the season, complement the plate, and elevate the overall experience. Under the expert guidance of Head Sommelier Farrah Scanlan, our wine programme blends heritage with curiosity, featuring an extensive cellar of exceptional Old and New World labels.

Guests enjoying either our table d’hôte or tasting menu are invited to choose from three expertly curated wine pairings:

  • Little Big Bear – A graceful introduction to pairing, €90

  • City of Troy – Complex and expressive, €130

  • No Nay Never – Rare, iconic wines of exceptional pedigree, €190

Each selection is chosen not only to match flavour, but to enrich the overall rhythm of your meal, highlighting the terroir, texture, and tone of every course.

For those wishing to explore wine more intimately, private wine tastings are available by appointment and may be tailored to your preferences or occasion:

Sensory Experience – €80 per person
An approachable introduction to the traits of wine explaining the acidity, structure, aroma, mouthfeel and more.

Old World vs New World – from €150 per person
A global journey through style and terroir, from Bordeaux to Napa, the Loire Valley to Marlborough.

Your Preference, Our Pleasure – from €180 per person
A bespoke tasting built around your favourite varietals, regions or themes, drawn from our extensive cellar.

Whether enjoyed as a standalone experience or followed by dinner in The Bishop’s Buttery, each tasting invites you to slow down, savour, and connect more deeply with the stories in every glass.
